What is Sodium Diacetate Crystal?

Sodium Diacetate Crystal is a crystalline powder made by synthesizing a preservative and antistaling agent. It has a molar ratio of 1:1 for acetic acid and sodium acetate. The manufacturing process involves using glacial acetic acid, ionic membrane process caustic soda flakes, and anhydrous sodium carbonate in specific weight percentages.

The process starts by mixing the caustic soda flakes and anhydrous sodium carbonate, gradually adding glacial acetic acid, and heating the mixture for 30-50 minutes at a maximum temperature of 65-85 degrees Celsius. After the reaction is completed, the mixture is cooled to below 50-60 degrees Celsius and then discharged. This method enables the synthesis of Sodium Diacetate Crystal in a single step, ensuring a high-quality product that meets industry standards for purity and composition.

Properties of Sodium Diacetate Crystal

Sodium diacetate crystal is a compound that is used as a food preservative and flavouring agent. It is a white crystalline solid with the chemical formula C4H7NaO4, and it has the following properties:

01.
Solubility

Sodium diacetate crystal is highly soluble in water and ethanol. This means that it easily dissolves in these solvents, making it a versatile compound for use in various food products.

02.
Melting Point

The melting point of sodium diacetate is approximately 190°C. This high melting point means that sodium diacetate can withstand high temperatures, which is useful in food processing and storage.

03.
Stability

Sodium diacetate crystal is stable under normal conditions of use and storage. This means that it does not break down or react with other substances in the environment, ensuring that it maintains its integrity and usefulness.

04.
pH

Sodium diacetate crystal has a slightly acidic pH of around 4.5 to 5.0. This pH range makes it a useful acidulant in food processing, as it can help adjust the acidity of a food product.

05.
Hygroscopic

Sodium diacetate crystal is hygroscopic, which means that it can absorb moisture from the air. This property is useful in preventing moisture from affecting the quality of food products and extending their shelf life.

06.
Odour

Sodium diacetate crystal has a faint vinegar-like odour. This odour is characteristic of the acetic acid component of sodium diacetate and is not generally considered a significant concern in food products.

07.
Density

The density of sodium diacetate is approximately 1.58 g/cm³. This means that it is relatively dense and can provide weight and volume to food products.

08.
Chemical properties

Sodium diacetate crystal is a salt of acetic acid, and it can act as a weak acid or a weak base in certain chemical reactions. This chemical property makes it useful in a wide range of food processing applications.

Safety

Sodium diacetate crystal is generally considered safe for human consumption at levels used in food products. However, excessive consumption may lead to gastrointestinal discomfort. As with all food additives, the safety of sodium diacetate is regulated by food safety authorities to ensure that it is safe for consumption.

Sodium Diacetate Crystal Applications

Sodium diacetate crystal have various applications across several industries. Here are some of the most common uses:

    1. As a preservative: Sodium diacetate crystal is used to preserve poultry products and red meat by hindering the growth of certain bacterial strains.
    2. Meat industry: Sodium diacetate crystal is used to control acidity in fresh meat.
    3. Industrial uses: It is utilized to control pH in the photographic and foam production industries.
    4. Personal care: Sodium diacetate crystal finds use in personal care products as a masking ingredient, a fragrance, and a buffering agent.
    5. Pharmaceutical industry: It is used for renal dialysis in the pharmaceutical industry.
    6. Agriculture: Sodium diacetate crystal is a registered fungicide and bactericide used to prevent spoilage in stored grains.
    7. Food industry: Sodium diacetate crystal and powder are used in the food industry as Acidulants and pH adjusters, metal sequestering agents, antifungal agents, and viscosifying agents. They are also used as seasoning and antimicrobial agents in food products.
    8. Bread industry: Sodium diacetate crystal in solid form is used as an inhibitor of molds and rope-forming bacteria in bread.
    9. Miscellaneous uses: Sodium diacetate crystal finds applications as buffering agents, mordants, varnish hardeners, souring agents, intermediate for acid salts, anti-tarnishing agents, and more.

In addition, Sodium Di acetate is used in solid dialysis preparations for patients with renal failure, controlled for the purpose of preventing volatilization of acetic acid as a pH adjusting agent.
